• 1 medium turnip, peeled and sliced

  • 2-3 summer squash, sliced

  • 1 bunch green onions

  • 1/2 lb of green beans, ends trimmed and cut in half

  • 1 lb sausage, bulk or links

  • Chopped fresh herbs (basil, rosemary, or thyme)

  • 3 T olive oil

  • Salt and pepper to taste

If sausage is links, cut into chunks. If it is bulk, form several quarter-sized sausage balls. Balls may fall apart a little during the tossing and spreading, that is fine. Toss sausage with veggies, oil, salt and pepper. Spread onto baking sheet and bake at 400 for 20-25 minutes. Turn veggies once halfway through.
